Ingredients
  Dried white beans 3 Cup (48 tbs)
  Olive oil 1⁄2 Cup (8 tbs)
  Onions 2 Medium, chopped
  Garlic 2 Clove (10 gm), crushed in a garlic press
  Canned tomato sauce 8 Ounce (1 Can)
  Tomato sauce 8 Ounce (1 Can)
  Celery stalks 2 , diced
  Carrot 1 , diced
  Bay leaf 1
  Oregano 1 Teaspoon
  Sugar 1 Teaspoon
  Wine vinegar 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

1. Place beans in a pot and cover with water. Bring to a boil. Simmer covered 2 to 3 hours, until just tender. Drain.
2. Heat oil in a saucepan, add onion, and cook until translucent. Add garlic, tomato sauce, celery, carrot, bay leaf, oregano, sugar, salt, and pepper. Simmer 5 minutes. (If sauce is too thick, add a little water.)
3. Add beans to sauce and simmer, covered, about 20 minutes, or until tender.
