Smothered Snap Beans
|Beans/2 can snap beans||2 Pound|
|Bacon/Cured ham||1 1⁄2 Pound|
|Bacon grease/Drippings/lard||1 Tablespoon|
|Onion||1 Large, chopped|
Prepare fresh beans by snapping off the ends and cutting up the beans.
Put the bacon or ham and the onion in a pot with 2 cups water, let boil 15 minutes, add the beans, boil 15 minutes longer, then add 1/2 teaspoon salt and 1 tablespoon bacon grease, drippings, or lard.
Cook young tender beans 30 minutes longer, older ones 40 minutes.
Canned beans may be done in 10 minutes.
