Curried Black Beans And Rice With Sausage
|Olive oil||1 Tablespoon|
|Onion||1 Medium, minced|
|Curry powder||1 Tablespoon|
|Smoked turkey sausage||1⁄2 Pound, thinly sliced|
|Chicken broth||3⁄4 Cup (12 tbs)|
|Canned black beans||32 Ounce, drained (Two 16 Ounce Cans)|
|White wine vinegar||1 Tablespoon|
|Cooked rice||3 Cup (48 tbs)|
Heat oil in large heavy skillet over medium heat.
Cook onion and curry powder, stirring well, until onion is tender.
Stir in turkey sausage and broth; simmer 5 minutes.
Stir in beans; cook until hot, stirring constantly.
Remove from heat and stir in vinegar.
Spoon over rice.
