Green Beans Amandine
|Fresh green beans||2 Pound|
|Ham hock||1 Small|
|Water||1 Cup (16 tbs)|
|Slivered almonds||2⁄3 Cup (10.67 tbs)|
|Onion||1⁄3 Cup (5.33 tbs), minced|
|Butter/Margarine||3 Tablespoon, melted|
Wash beans and remove strings.
Cut beans into 1 1/2 inch pieces.
Place in a 5 quart Dutch oven; add ham hock and water.
Bring to a boil; cover, reduce heat, and simmer 30 minutes.
Drain off excess liquid.
Saute almonds and onion in butter until onion is tender.
Add to beans, along with salt; toss lightly.
