Groovy Green Beans
|Green beans||1 Pound, cut in 2 inch lengths|
|Margarine||1⁄4 Cup (4 tbs)|
|Onion||1⁄4 Cup (4 tbs), finely chopped|
|Whole wheat pastry flour||1⁄4 Cup (4 tbs)|
|Milk||2 Cup (32 tbs)|
|Black pepper||1⁄2 Teaspoon|
|Parsley||1 Tablespoon, chopped|
|Hard cooked eggs||6 , sliced|
|Whole wheat bread crumbs||1⁄4 Cup (4 tbs)|
|Swiss cheese||1⁄2 Cup (8 tbs), grated|
Steam green beans until tender crisp.
Melt margarine in a skillet and saute onions until tender.
Remove from heat and stir in flour.
Return skillet to stove and gradually add milk, stirring until sauce thickens.
Season with salt, pepper, thyme, savory, and parsley.
Simmer 2 minutes.
Layer beans, egg slices, and sauce in a casserole.
Combine bread crumbs with cheese, and sprinkle over top.
Bake for 20 minutes in a 350 degree oven.
