Artichokes With Fava Beans
|Onions||2 , chopped|
|Lemon||1 , juiced|
|Butter||1⁄4 Cup (4 tbs)|
|Fava beans||1 Pound, cleaned|
|Frozen artichoke hearts||20 Ounce (1 Package)|
|Milk||1⁄2 Cup (8 tbs)|
|Parsley||2 , chopped|
|Water||1 Cup (16 tbs)|
Brown chopped onions or scallions lightly in butter.
Stir in flour and about 1/2 cup water.
Add dill, parsley, and salt and pepper.
Add juice of 1/2 lemon, fava beans, and water to cover.
Bring to a boil, cover, and simmer for 20 minutes.
Add artichoke hearts and continue cooking until vegetables are tender.
When cooked, strain juice and add milk.
Beat egg with remaining lemon juice and gradually beat in the hot milk mixture.
Cook over low heat, stirring constantly, until sauce coats the spoon.
Pour over vegetables and serve warm.
