One Bean Toss
|Sliced pitted ripe olives||1⁄2 Cup (8 tbs)|
|Sliced pimiento stuffed green olives||1⁄4 Cup (4 tbs)|
|Canned peas||16 Ounce, drained (1 Can)|
|Canned lima beans||16 Ounce, drained (1 Can)|
|Mayonnaise||1⁄2 Cup (8 tbs)|
|Grated onion||2 Tablespoon|
|Lemon juice||1 Tablespoon|
|Capers||1 Tablespoon, drained|
|Liquid||2 Teaspoon (From Capers)|
|Herbed carrots||1 Cup (16 tbs)|
Set aside a few olive slices for garnish; combine remaining olive slices, peas, and limas in bowl.
Combine next 5 ingredients, 1/2 teaspoon salt, and dash pepper; pour over bean mixture and toss lightly.
Cover; chill several hours, stirring occasionally.
To serve, mound salad in center of lettuce-lined platter.
Top with reserved olives and additional mayonnaise, if desired.
Arrange Herbed Carrots and parsley around.
