One Bean Toss

The one bean toss is a lima bean and vegetable salad made with added capers. Parsleyed to taste and dressed with mayonnaise, the one bean toss is delicious and tasty with mingled flavors in it.
  Sliced pitted ripe olives 1⁄2 Cup (8 tbs)
  Sliced pimiento stuffed green olives 1⁄4 Cup (4 tbs)
  Canned peas 16 Ounce, drained (1 Can)
  Canned lima beans 16 Ounce, drained (1 Can)
  Mayonnaise 1⁄2 Cup (8 tbs)
  Grated onion 2 Tablespoon
  Lemon juice 1 Tablespoon
  Capers 1 Tablespoon, drained
  Liquid 2 Teaspoon (From Capers)
  Herbed carrots 1 Cup (16 tbs)
  Parsley 1

Set aside a few olive slices for garnish; combine remaining olive slices, peas, and limas in bowl.
Combine next 5 ingredients, 1/2 teaspoon salt, and dash pepper; pour over bean mixture and toss lightly.
Cover; chill several hours, stirring occasionally.
To serve, mound salad in center of lettuce-lined platter.
Top with reserved olives and additional mayonnaise, if desired.
Arrange Herbed Carrots and parsley around.
