Curried Green Beans
|Fresh green beans||1 Pound|
|Minced onion||1⁄4 Cup (4 tbs)|
|Curry powder||3⁄4 Teaspoon|
|All purpose flour||1 Tablespoon|
|Salt||1 1⁄2 Teaspoon|
|Egg yolk||1 , beaten|
|Milk||3⁄4 Cup (12 tbs)|
|Lemon juice||2 Teaspoon|
Wash; string, and cut beans into 3 inch strips.
Cook beans, covered, in 1/2 inch boiling, salted water for 15 minutes or until tender.
Melt butter or margarine in top of double boiler; add onion and simmer until tender.
Stir in curry powder, flour, and salt.
Combine egg yolk and milk; gradually add to ingredients in top of double boiler.
Cook over boiling water, stirring constantly, until mixture thickens.
Add lemon juice, stir well, and pour over cooked beans.
