Betty demonstrates how to make Homestyle Pinto Beans. This makes a hearty meal when combined with Green Chile Onion Cornbread Wedges from the previous video.
Pinto beans | 1 Pound , sorted and soaked overnight in water. water should cover beans with 2 additional inches above the beans | |
Cooked bacon | 1/2 Pound , partially cooked, chopped | |
Coarse sea salt | 1 1/2 Teaspoon | |
Water | To Taste ((As Required |
GETTING READY
Soak the pinto beans in water for altleast 12 hrs.
MAKING
Drain the soaked pinto beans and place in a large pot.
Place bacon over top. Cover with water, with and additional inch of water over the top.
Bring beans to a boil over medium heat. Reduce heat and simmer beans until tender, about 2 ½ hours.
Near the end of cooking, season to taste with salt. When beans are done, transfer them to a large serving bowl.
SERVING
Ladle individual servings into soup bowls and serve with Green Chile and Onion Cornbread Wedges from the previous video in Betty's Kitchen (http://ifood.tv/cornbread/1004104-bettys-green-chile-onion-cornbread-wedges).
