|Egg whites||2 , beaten stiff|
|Fat||2 Cup (32 tbs) (for deep frying)|
|Canned pineapple slices||1 1⁄4 Can (12.5 oz), drained (1 large can)|
|Confectioners sugar||1 Tablespoon|
With a wooden spoon, stir the fritter batter ingredients in the order given.
Fold in the egg whites last.
Heat the fat for deep frying in a large skillet.
Dip each pineapple ring in the batter, coating it thoroughly.
Fry until lightly browned all over.
Drain fritters on a paper towel.
Sprinkle fritters with confectioners' sugar, if desired.
