Hake In Beer Batter With Mushy Peas

Ingredients
  Hake fillet/Other chunky firm- textured white fish fillets 4
  Plain flour 50 Gram
  Rice flour 50 Gram
  Baking powder 2 Teaspoon
  Salt To Taste
  Ale 150 Milliliter (Such As London Pride)
  Vodka 40 Milliliter
  Clear honey 1⁄2 Teaspoon
  Groundnut oil/Vegetable oil 2 Cup (32 tbs) (For Frying)
  Mint 1
  Frozen peas 350 Gram
  White wine vinegar 1 Tablespoon
  Chips 1 Cup (16 tbs)
  Tartar sauce 1 Tablespoon
Directions

MAKING
1. Check Hake fillet for pin bones and remove them, if any, with kitchen tweezers; chill right before cooking
2. For Batter, sift flour, rice flour, salt and pepper nad baking powder into a large bowl and make a well in its centre
3. In a smaller bowl, combine ale, honey and vodka and pur it into the well
4. Whisk well to combine, cover and let it stand for an hour
5. For the mushy peas, fill a pan one third with salted water and drop mint leaves into it; allow it to boil
6. Add peas and blanch for a couple of minutes till tender; drain and reserve the water
7. Add the peas to the food processor along with wine vinegar and seasoning and pulse into a coarse puree; add the reserve liquid if need be
8. Heat oil in a heavy pan; dip the fish fillets into the flour and then the batter and deep fry them; turn them around till evenly golden
9. Remove and drain away the excess oil; keep the fillets warm

SERVING
10. Serve the fish and mushy peas with chips and tartare sauce.
