White Bass

White bass is a fresh water fish which belongs to the family of Moronidae and is one of the most consumed fishes in America. The fish is alternatively known by names such as barfish, sand bass, silver bass, corvina and streaker. It is native to some of the big rivers and great lakes in the western United States.

It is commonly referred to as a sea bass.

 

Flavor Profile
This fish is low in fat and has moderately mild flavor with large white flakes and meaty texture. The flavor of the fish resembles halibut.

 

Preparation Methods
The fish can be cooked as chunks, steaks and skinless fillets. The skin of this fish is strong tasting and tough to peel. It can be prepared using any of the following methods.

  • Grilling – The fish fillets are placed on the skewer which is placed on the greased grill. The skewer is basted with marinade, butter or oil and cooked until its center becomes opaque.
  • Baking – The sea bass is placed over a greased baking dish which is kept on a baking sheet and baked in an oven preheated at 450°F (230°C).  The fish is baked for about 10 minutes per inch of thickness.
  • Pan Frying – The fish fillets are fried in small amounts of oil or butter until it becomes moist and opaque on both the sides.
  • Broiling – The fillets are marinated or seasoned with spices and placed on a buttered greasing pan. The fillets are sometimes dipped in the flour mixture and broiled under preheated broiler. The fillets are cooked until it becomes moist and opaque on both sides.
  • Deep Frying – The fish fillets are fried in skillet with lots of oil. Sometimes it is dipped in batter prior to frying.
  • Stir-Frying – The fish fillets are coated with cornstarch and stir-fried in oil before adding to the stir-fried vegetables.
  • Roasting – The fish fillets are smeared with little oil and roasted.

 

White Bass Recipes

  •  Barfish with Roasted Red Peppers – This is a very simple preparation involving White Sea bass. The sea bass fillets are roasted and served with red peppers. The dish is sometimes teamed with a Spanish white wine such as Sicilian grillo, Albarino, or Monterey gewurztraminer.
  • Sea Bass Jerky – This can be prepared using most of the sea bass fish varieties. White bass is considered the best for making this jerky. It is prepared using ingredients like sugar, soy sauce, ginger, garlic and White Sea bass fillets. All the ingredients except the fish are combined and fish is marinated in it and dried in the oven.
