Steamed Sea Bass

|Sherry||1 1⁄2 Teaspoon|
|Fermented black beans||1⁄4 Tablespoon, mashed|
|Scallion stalks||2 , cut into 1 inch sections|
Clean the fish and do not remove the head and tail.
Score both sides of the fish with diagonal slashes about 11/2 inches apart.
Drain the fish and dry it well.
Rub the inside and outside of the fish with the oil, making sure that the gashes are well coated.
Heat an ovenproof serving bowl and place a rack in a pan filled to 2 inches of boiling water.
Place the fish in the serving bowl and sprinkle with salt, sugar and sherry, and cover with the black beans, scallions and ginger.
Place the bowl on the rack, cover and turn up the heat.
Steam for 15 minutes and serve very hot in the shallow bowl.
