Sweet-Sour Sea Bass

This Sweet Sour Bass is something that you'll crave for once you try it out with a bowl of rice ! Just enjoy these crispy brown fried toothfish with sweet and sour sauces poured over !   Bass 1 Pound
  Oil   (for frying)
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Green pepper 1 , diced
  Vinegar 3⁄4 Cup (12 tbs)
  Sherry 1⁄4 Cup (4 tbs)
  Sugar 2 Teaspoon
  Soy sauce 3 Tablespoon
  Cornstarch 1 Teaspoon
  Water 1 Cup (16 tbs)

Clean fish and do not remove the head.and tail.
Score the sides about 1 1/2 inches apart and 1 inch deep.
Season with pepper, salt, and soy sauce.
Allow it to stand for 10 minutes to absorb the flavor.
Mix the ingredients for the sauce, making sure to blend the cornstarch well.
Place in a pan, bring to a boil.
Add the green pepper and simmer for 10 minutes.
Set it aside and keep it very hot.
Heat another pan filled up to 2 inches of oil and when it is very hot lower the fish in slowly and fry one side for 5 minutes and 2 minutes on the other.
Arrange on a hot platter and pour the hot sauce over it and serve immediately.
