Poached Whole Bass

|Cider vinegar/1 cup white wine||1⁄3 Cup (5.33 tbs)|
|Onion||1 , studed with 2 cloves|
|Whole stripped bass||1|
Place all ingredients except fish in a large flat pan; bring to boil and cook for 10 minutes.
Wrap fish in cheesecloth, lower into liquid, and simmer, covered, for 16 to 20 minutes.
