Poached Whole Bass

Ingredients
  Water 1 Quart
  Cider vinegar/1 cup white wine 1⁄3 Cup (5.33 tbs)
  Carrot 1
  Onion 1 , studed with 2 cloves
  Cloves 2
  Parsley sprig 1
  Stalk celery 1
  Salt 1 Tablespoon
  Lemon slices 2
  Whole stripped bass 1
Directions

Place all ingredients except fish in a large flat pan; bring to boil and cook for 10 minutes.
Wrap fish in cheesecloth, lower into liquid, and simmer, covered, for 16 to 20 minutes.
