Tomatoes Baked With Basil
|Onions||2 Large, thinly sliced and pushed out into rings|
|Tomatoes||2 Large, skinned and thinly sliced|
|Basil||2 Tablespoon, freshly chopped|
|Black pepper||To Taste|
|Fresh breadcrumbs||3 Ounce (75 Gram)|
Melt half the butter in a frying pan.
Add the onions and fry until they are soft but not brown.
Remove from the heat and place half the onion rings in a greased baking dish.
Cover with half the tomato slices and sprinkle with half the basil, salt and pepper and a little sugar.
Make another layer of onion rings and tomato slices and sprinkle with the remaining basil, salt and pepper and sugar.
Cover the top with the breadcrumbs.
Cut the remaining butter into small pieces and dot over the top.
Bake in a fairly hot oven (190 °C/375 °F or Gas Mark 5) for 30 minutes.
