1. In a 4- to 5-quart (3.8- to 5-liter) pan, bring 8 cups (1.9 liters) water to a boil over high heat. Drop basil into boiling water and cook just until bright green (about 3 seconds); immediately drain, then plunge into ice water until cool. Drain basil well again; blot dry.
2. In a blender or food processor, combine basil and 1/4 cup (60 ml) of the oil. Whirl until well blended. Add remaining 3/4 cup (180 ml) oil and whirl until smoothly pureed. Transfer oil mixture to a small pan and heat over medium heat, stirring occasionally, just until warm (not hot or boiling). Remove from heat and let cool slightly
