Salmon With Fresh Tomato & Basil
|Olive oil||3 Tablespoon|
|Salmon steaks/Substitute steaks||32 Ounce (1 Inch Thick)|
|Coarsely chopped onion||1 Cup (16 tbs)|
|Garlic||2 Clove (10 gm), minced|
|Snipped fresh basil||1 Tablespoon|
|Peeled seeded chopped tomatoes||2 Cup (32 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Freshly ground pepper||1⁄4 Teaspoon|
In 10-inch skillet, heat oil over medium heat.
Fry for 2 to 4 minutes, or until golden brown, turning over once.
Remove steaks from skillet.
To same skillet, add onions.
Cook for 1 to 2 minutes, or until tender-crisp.
Add garlic and basil.
Cook for 1 minute.
Stir in remaining ingredients.
Arrange steaks over tomato mixture.
Reduce heat to low.
Simmer for 11 to 13 minutes, or until fish is firm and opaque and just begins to flake.
