Gemelli E Heirloom Tomatoes E Basil

Ingredients
  Vinaigrette 2 Tablespoon (Use As Required)
  Extra virgin olive oil 3⁄4 Cup (12 tbs)
  Balsamic vinegar 1⁄4 Cup (4 tbs)
  Dijon mustard 2 Tablespoon
  Hard-boiled eggs 2 , finely chopped
  Gemelli 1 Pound, cooked al dente, rinsed to prevent sticking
  Pecorino 6 Ounce, shaved
  Heirloom tomatoes 3 , mixed
  Basil 3⁄4 Bunch (75 gm), leaves torn
  Freshly ground black pepper To Taste
  Salt To Taste
Directions

Vinaigrette: Add all ingredients to a blender, and blend until smooth. If necessary, add more vinegar to adjust the acidity.

Salad: Put all the ingredients in a large bowl and toss together with the vinaigrette. Season with salt and pepper. Serve at room temperature.
