Swordfish With Orange Basil Butter
|Extra virgin olive oil||2 Tablespoon|
|Orange juice||1 Cup (16 tbs) (3/4 Cup Plus 2 Tablespoons)|
|Chopped fresh basil/1 tablespoon dried basil||1⁄4 Cup (4 tbs)|
|Swordfish steaks||32 Ounce, cut 3/4 inch thick (Four 8 Ounce Pieces)|
|Butter||8 Tablespoon, softened (1 Stick)|
|Grated orange zest||1|
1. Combine oil, 3/4 cup orange juice, pepper, and one fourth of basil. Brush each side of fish with mixture. Place on plate, cover with plastic wrap, and refrigerate 1 hour.
2. Preheat broiler. Season fish with salt. Broil 3 to 4 inches from heat, turning once, 8 to 10 minutes, or until lightly browned outside and just opaque inside.
3. In small bowl, beat butter with an electric mixer until soft. Add remaining basil, orange zest, and 2 tablespoons orange juice. Beat just to combine.
