Pasta E Fagioli With Basil
|Olive oil||1 Tablespoon|
|Onion||1 Medium, chopped|
|Garlic||4 Clove (20 gm), chopped|
|Mushrooms||1⁄2 Pound, sliced (230 Gram)|
|Red bell pepper||1 , chopped|
|Celery stalks||2 , sliced|
|Canned cannellini/Red kidney / great northern beans||30 Ounce (Drained, Rinsed)|
|Spinach leaves||1⁄2 Pound, chopped (230 Gram)|
|Basil||1 Cup (16 tbs), chopped (For Garnish)|
|Ziti||1 Pound, cooked al dente|
Coat a nonstick skillet with olive oil cooking spray.
Saute onion, garlic, mushrooms, bell pepper and celery for 5 minutes, or until soft.
Reduce heat and add tomatoes with juice, and beans.
Add water (optional) to reach desired consistency.
Cover and simmer for 15 minutes.
Add spinach, basil, salt and pepper.
Simmer 15 more minutes.
