Fried Eggplants With Garlic And Basil
|Eggplants||2 Large (Firm Variety)|
|Garlic cloves||2 Large, peeled|
|Olive oil||6 Tablespoon|
1 Trim off the ends of the eggplants.
2 Peel and quarter them lengthwise.
3 Scoop out the central section if there are seeds in it.
4 Chop into dices.
5 In a very large, nonstick skillet, heat the oil.
6 Add the eggplant dices with the finely sliced garlic cloves and stir fry over fairly high heat.
7 As soon as they have browned lightly, cover the skillet.
8 Reduce the heat to very low, and cook gently for 15 minutes.
9 Check occasionally, as you may need to add 2-3 tbsp water after a while.
10 Serve at once, garnished with fresh basil leaves.
