Broccoli With Basil
|Broccoli florets||1 3⁄4 Pound, cut into florets, with stems peeled and sliced 1/4 inch thick|
|Firmly packed fresh basil/Firmly packed fresh parsley||1 1⁄2 Cup (24 tbs)|
|Garlic||1 Clove (5 gm)|
|Pine nuts/Chopped walnuts||1 Tablespoon|
|Grated parmesan cheese||1 Tablespoon|
|Low sodium chicken broth||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Teaspoon|
In a large saucepan, bring an inch of unsalted water to a boil; add the broccoli and cook, uncovered, for 4 minutes or until just tender.
Drain well and transfer to a medium size bowl.
In an electric blender or food processor, whirl the basil, garlic, pine nuts, cheese, and chicken broth for 20 seconds.
Stir in the lemon juice, pour over the broccoli, and toss.
