Baked Barley with Mushrooms
|Pearl barley||1⁄2 Pound (About 225 Grams Or 1 Cup)|
|Butter||3 Ounce (About 75 Grams Or 3/8 Cup)|
|Onion||1 , chopped|
|Sliced mushrooms||1⁄2 Pound (About 225 Grams Or 2.5 Cups)|
|Vegetable stock||1 Pint (About 500 Milliliter Or 2 1/5 Cups)|
1 Soak the barley for 2 hours in warm water.
2 Preheat the oven to 180Â°C, 350Â°F,gas4.
3 Heat the butter in a frying pan (skillet) and saute the onion, mushrooms and barley.
Season with salt and pepper and stir until the barley has browned slightly.
4 Place in a casserole and add the vegetable stock.
5 Cover and bake for1 hour until the barley is cooked, but is still slightly crunchy
