Baked Barley with Mushrooms

Ingredients
  Pearl barley 1⁄2 Pound (About 225 Grams Or 1 Cup)
  Butter 3 Ounce (About 75 Grams Or 3/8 Cup)
  Onion 1 , chopped
  Sliced mushrooms 1⁄2 Pound (About 225 Grams Or 2.5 Cups)
  Vegetable stock 1 Pint (About 500 Milliliter Or 2 1/5 Cups)
  Salt To Taste
  Pepper To Taste
Directions

1 Soak the barley for 2 hours in warm water.
Drain.
2 Preheat the oven to 180°C, 350°F,gas4.
3 Heat the butter in a frying pan (skillet) and saute the onion, mushrooms and barley.
Season with salt and pepper and stir until the barley has browned slightly.
4 Place in a casserole and add the vegetable stock.
5 Cover and bake for1 hour until the barley is cooked, but is still slightly crunchy
