Barley With Peas And Red Peppers

Ingredients
  Pearl barley 3 Ounce
  Water 1 Cup (16 tbs)
  Garlic cloves 2 , minced
  Frozen green peas 1 Cup (16 tbs)
  Chopped red bell peppers 1 Cup (16 tbs)
  Non fat chicken broth 1⁄4 Cup (4 tbs)
  Chopped parsley 2 Tablespoon
  Non fat parmesan cheese 1 Tablespoon
Directions

Combine barley, water, and garlic in a microwave-safe casserole.
Cover with vented plastic wrap.
Microwave on high for 5 minutes.
Stir.
Microwave on high for 7 more minutes.
Stir.
Microwave on medium for 5 minutes.
Add green peas, red peppers, chicken broth, parsley, and Parmesan cheese.
Microwave on high for 5 minutes.
Let stand 5 minutes before serving.
