Barley Wheat Crepes
|Wheat flour||3⁄4 Cup (12 tbs)|
|Barley flour||1⁄2 Cup (8 tbs)|
Reduce whole wheat flour to 3/4 cup and add 1/2 cup barley flour.
Combine the flour in a blender and set aside for at least 2 hours.
Brush crepe pan, 6 or 7-inch skillet, with melted butter.
Spoon batter in pan as thin as possible, using about 1/4 scant cup.
Twirl pan to spread.
Brown lightly, turn and brown the other side.
Brush pan lightly with melted oil or butter for each baking.
