2 In a pan add barley with water.
3 Add in very thinly peeled rind of the lemon, if desired.
4 Gradually bring to a boil.
5 If using as a cooling drink, immediately strain over the sugar and lemon juice. Serve hot or cold.
6 If using as a soothing drink for complaints of the digestive tract, stew for about 1 hour, strain and sweeten.
Barley water can be kept for a few hours only.
