Turkey And Barley Deluxe
|Low fat plain yogurt||8 Ounce (1 Carton, Or As Required)|
|Reduced sodium soy sauce||2 Tablespoon|
|Garlic clove||1 Small, finely minced|
|Ginger||1⁄2 Teaspoon, ground|
|Barley||3 Cup (48 tbs), cooked, cooled|
|Turkey breast||3⁄4 Pound, cooked, cubed|
|Frozen pea pods||10 Ounce, cooked and well drained|
|Fresh corn||1 Cup (16 tbs), cooked|
|Canned pimentos||2 Ounce, diced, drained (1 Jar)|
|Lettuce leaves||3 (As Required)|
|Black pepper||To Taste, freshly ground|
1) In a large bowl, mix the yogurt, soy sauce, garlic and ginger together.
2) Then stir in the barley, turkey, pea pods, pimentos and corn, until evenly coated.
3) Cover and place in the refrigerator for few hours or overnight.
4) Serve chilled on individual serving plates.
