Barley Skillet Dinner
|Canola oil||1 Tablespoon|
|Onion||1 , chopped|
|Celery stalks||2 , sliced|
|Carrots||2 , sliced|
|Chicken broth||3 Cup (48 tbs)|
|Lemon juice||3 Tablespoon|
|Quick cooking barley||3⁄4 Cup (12 tbs)|
|Frozen brussels sprouts/3/4 pound fresh ones||10 Ounce (1 Package)|
|Cubed cooked chicken||1 Cup (16 tbs)|
|Grated romano cheese||2 Tablespoon|
1.Take a large skillet or Dutch oven.
2.Put oil in it and heat.
3.Put onions, celery and carrots in it and saute well.
4.Stir in broth, lemon juice and barley.
5.Lower the flame and cook for 25 minutes after covering.
6.Put Brussels sprout and chicken in it and cook for 10 more minutes until the sprouts are soft and the liquid evaporates.
7.Add salt and pepper as per taste.
9.Serve immediately after preparation.
