Stewed Barley And Vegetables

Ingredients
  Medium pearl barley 1 Cup (16 tbs)
  Yellow onion 1 Large, peeled and minced
  Carrots 3 , peeled and cut in small dice
  Celery stalks 2 , cut in small dice
  Diced rutabaga 1 Cup (16 tbs)
  Minced parsley 2 Tablespoon
  Salt 2 Teaspoon (About)
  Pepper 1⁄4 Teaspoon
  Beef broth 1 Quart
Directions

MAKING
1) In a large heavy saucepan, combine all the ingredients and simmer covered for 1 to 1 1/4 hours until the barley is tender.
2) Taste and adjust the seasoning.

SERVING
3) Serve immediately in a nice plate or a bowl as a vegetable.
