Stewed Barley And Vegetables

|Medium pearl barley||1 Cup (16 tbs)|
|Yellow onion||1 Large, peeled and minced|
|Carrots||3 , peeled and cut in small dice|
|Celery stalks||2 , cut in small dice|
|Diced rutabaga||1 Cup (16 tbs)|
|Minced parsley||2 Tablespoon|
|Salt||2 Teaspoon (About)|
|Beef broth||1 Quart|
1) In a large heavy saucepan, combine all the ingredients and simmer covered for 1 to 1 1/4 hours until the barley is tender.
2) Taste and adjust the seasoning.
3) Serve immediately in a nice plate or a bowl as a vegetable.
