Beans And Barley Chili

Ingredients
  Medium barley 1 Cup (16 tbs)
  Chopped onion 2 Cup (32 tbs)
  Chopped red pepper 2 Cup (32 tbs)
  Vegetable oil 1 Tablespoon
  Minced garlic 1 Tablespoon
  Chili powder 2 Tablespoon
  Ground cumin 1 1⁄2 Teaspoon
  Cayenne pepper 1⁄8 Teaspoon
  Canned fat free reduced sodium chicken broth 14 1⁄2 Ounce (1 Can)
  Canned no salt added stewed tomatoes 14 1⁄2 Ounce (1 Can)
  Canned kidney beans 15 1⁄2 Ounce, rinsed and drained (1 Can)
  Canned black beans 15 Ounce, drained, rinsed (1 Can)
  Canned black eyed peas 15 1⁄2 Ounce, rinsed and drained (1 Can)
Directions

Cook barley without adding salt; drain.
Saute onion and green pepper in oil for 5 minutes.
Add barley and remaining ingredients; bring to a boil.
Reduce heat; simmer 20 minutes.
