Barley Water

Ingredients
  Pearl barley 1⁄4 Cup (4 tbs)
  Water 1 Quart
  Lemons 2 , rind grated and fruit juiced
  Sugar 2 Teaspoon (Or To Taste)
Directions

Combine barley, water, and lemon rind in a saucepan.
Bring to a boil.
Lower heat and simmer, covered, over lowest possible heat for 2 hours.
Strain; add lemon juice and sugar to taste.
Chill before serving.
