|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Quick cooking oats||1 1⁄4 Cup (20 tbs), uncooked|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Butter/Margarine||3⁄4 Cup (12 tbs), melted|
|Vanilla extract||2 Teaspoon|
|Apricot preserves||10 Ounce|
|Flaked coconut||1⁄2 Cup (8 tbs)|
Combine flour, oats, sugar, soda, and salt in a large bowl, blend well.
Add butter and vanilla, mix until crumbly.
Reserve 1 cup mixture.
Press remaining crumb mixture into a greased 13- x 9- x 2-inch baking pan.
Spread apricot preserves on crust to within 1/4 inch from edge of pan.
Sprinkle with reserved crumb mixture and coconut.
Bake at 350Â° for 20 to 25 minutes or until lightly browned.
Cool and cut into bars.
