Tangy Lemon Bars
|Butter||1⁄3 Cup (5.33 tbs)|
|All purpose flour||3⁄4 Cup (12 tbs)|
|Eggs||2 , beaten|
|Firmly packed brown sugar||1 Cup (16 tbs)|
|Flaked coconut||3⁄4 Cup (12 tbs)|
|Pecans||1⁄2 Cup (8 tbs), chopped|
|Vanilla extract||1⁄2 Teaspoon|
|Baking powder||1⁄4 Teaspoon|
|Lemon frosting||(as required)|
Cut butter into flour with a pastry blender until mixture resembles coarse meal.
Press crumb' mixture in an ungreased 11- x 7- x 2-inch baking pan.
Bake at 350Â° for 10 minutes or until lightly browned.
Combine beaten eggs, brown sugar, coconut, chopped pecans, vanilla, and baking powder in a medium mixing bowl, mix well.
Pour batter over warm crust.
Bake at 350Â° for 20 minutes.
Remove from oven, and spread top immediately with Lemon Frosting.
Cut into bars.
