|Firmly packed brown sugar||1 Cup (16 tbs)|
|Apricot preserves||3⁄4 Cup (12 tbs)|
|Unbleached flour||3⁄4 Cup (12 tbs)|
|Baking powder||1 Teaspoon|
|Ripe banana||3⁄4 Cup (12 tbs), mashed|
|Chopped nuts||1⁄2 Cup (8 tbs)|
|Powdered sugar||1 Teaspoon|
Preheat oven to 350Â°F Grease (not oil) and flour 15x10 inch jelly roll pan.
In mixing bowl, blend butter and brown sugar.
Beat in preserves, eggs and vanilla.
(Lightly spoon flour into measuring cup; level off.) Stir in remaining ingredients.
Spread in prepared pan.
Bake 25 to 30 minutes or until toothpick inserted in center comes out clean.
Sprinkle with powdered sugar.
