Grape-Nuts Butterscotch Slices
|Sifted flour||3 1⁄2 Cup (56 tbs)|
|Baking powder||3 1⁄4 Teaspoon (Calumet)|
|Butter/Shortening||1 Cup (16 tbs)|
|Firmly packed brown sugar||1 1⁄2 Cup (24 tbs)|
|Grape-nuts/Grape nut flakes||1 Cup (16 tbs)|
|Lemon juice||1 1⁄2 Teaspoon|
|Vanilla||1 1⁄2 Teaspoon|
Sift flour once, measure, add baking powder and salt, and sift again.
Cream butter thoroughly; add sugar gradually, creaming well.
Add eggs, one at a time, beating thoroughly after each.
Add cereal and flavorings; then add flour, mixing well.
Pack dough in lightly greased 9x9-inch loaf pan; cover with waxed paper.
Chill overnight, or until firm enough to slice.
Turn out on board, divide into quarters, and cut into 1/8-inch slices.
Slices may be cut in half, if desired.
Bake on ungreased baking sheet in hot oven (425Â°F.) for 6 to 7 minutes, or until done.
