Healthy iron rich, Apricot and Cashew Power bars for International womens day


Dried apricots 200 Gram (organic)
Candied ginger 1 1/2 Tablespoon
Sunflower seeds 2 Tablespoon
Cashew nuts 1/2 Cup (8 tbs)
Coconut oil 1 Tablespoon
Agave/Honey 2 Tablespoon
Desicated coconut 30 Gram
Salt 1 Pinch



1. Preheat the oven to 350 F/180 C. Line a baking tray with parchment paper and aside.


2. In a baking sheet, spread sunflower seeds, cashews and coconut and pop in the oven for 5 – 6 minutes or until lightly brown.

3. Let it rest until completely cool.

4. In a food processor, blitz together the apricots, ginger, coconut oil and agave, until almost smooth. Take out and set aside.

5. Into the same processor, add in the baked nuts and process until finely ground. Tip out into a mixing bowl and add in the apricot mixture. Mix well.

6. Press the mixture into the prepared baking tray and leave to chill and harden in the fridge.


7. Slice the bars and serve.
