With school lunches back on the brain, I always love finding ways to pack healthy snacks that the children will love. Mixing both fresh fruit and oatmeal to create a homemade granola bar is one of those lunch box staples that I can count on being enjoyed no matter how many times I pack it. Im using Stemilts world famous cherries in this recipe for one final taste of summer before these tasty fruits are out of season.

Ingredients

Old fashioned oatmeal 2 Cup (32 tbs)
Sliced almonds 1 Cup (16 tbs) , toasted
Shredded coconut 1 Cup (16 tbs) , loosely packed, toasted
Unsalted butter 4 Tablespoon
Honey 3/4 Cup (12 tbs)
Light brown sugar 1/2 Cup (8 tbs) , lightly packed
Kosher salt 1/4 Teaspoon
Fresh cherry compote 2 Cup (32 tbs)

Directions

GETTING READY

1. Preheat the oven to 350 degree F.

2. Butter a medium sized baking sheet pan and line it with parchment paper.

MAKING

3. On the pan, toss together oatmeal, almonds, and coconut. Pop the pan in oven and bake for 10-12 minutes, stirring occasionally or until lightly browned.

4. Remove from oven and reduce the heat to 300 degree F.

5. Into a large mixing bowl, transfer the mixture.

6. In a saucepan add in the butter, honey, brown sugar, and salt. Bring to a boil over medium heat. Cook just long enough to melt and combine the ingredients, and then pour into the mixing bowl.

7. Mix the oatmeal blend and butter blend together, taking care to coat the entire mixture.

8. Spoon half of the mixture back onto your baking pan, and use your fingers to pat it down to an even surface.

9. Spoon the cherry compote across the top of the surface, and then top with the remainder of the oatmeal blend. Press the top again to create an even surface.

10. Pop in oven and bake for 20-30 minutes, or until lightly browned.

11. Remove from oven and allow it to cool to room temperature before chilling in the fridge for 1-2 hours.

12. Once cool, cut into squares. Store bars in the fridge for up to a week.

13. Serve and enjoy!
