Crunchy Almond Bars
|Shortening||1 Cup (16 tbs)|
|Sugar||1 1⁄4 Cup (20 tbs)|
|Almond extract||1⁄4 Teaspoon|
|Flour||2 1⁄4 Cup (36 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Toasted slivered almonds||1⁄2 Cup (8 tbs)|
|Candied cherries||1⁄2 Cup (8 tbs), halved|
|Flaked coconut||1⁄2 Cup (8 tbs)|
|Semi sweet chocolate||6 Ounce (1 Package Or 1 Cup)|
|For simply sweet glaze|
|Candied cherries||2 Tablespoon, sliced (For Garnish)|
|Sifted powdered sugar||1 Cup (16 tbs)|
Grease a 16" x 11" baking pan; set aside.
Preheat oven to 375° (190°C).
In a large mixer bowl, cream shortening and sugar until light and creamy.
Beat in egg and almond extract.
Add flour, baking powder and salt; mix well.
Stir in almonds, candied cherries, coconut and chocolate pieces.
Spread in prepared pan.
Bake 20 minutes.
While baking, prepare Simply Sweet Glaze.
Drizzle glaze over warm cake.
Cut into 1" x 2" bars.
Garnish each bar with a cherry slice.
Simply Sweet Glaze: In a small saucepan, melt butter or margarine with milk over low heat.
Remove from heat.
Stir in powdered sugar until creamy.
