Butterscotch Pecan Bars
|Butter||1⁄2 Cup (8 tbs)|
|Firmly packed brown sugar||1 Cup (16 tbs)|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Finely chopped pecans||2 1⁄2 Cup (40 tbs)|
In mixing bowl, cream together butter and 1/4 cup (50 mL) brown sugar.
Beat in egg, vanilla and salt until light and fluffy.
Stir in flour, Press mixture onto bottom of 13- x 9-inch (33 x 23 cm) baking dish or cake pan.
Bake in 350°F (180°C) oven for 15 minutes.
Remove from oven and set aside.
In saucepan, combine pecans, remaining brown sugar, vinegar and egg whites; cook, stirring, over moderately high heat for 2 minutes.
Spread over crust; bake for 15 minutes longer.
Let cool before slicing into bars.
