Rocky Road Bars
|Butter/Margarine||1⁄3 Cup (5.33 tbs)|
|Unsweetened chocolate||1 Ounce|
|Sugar||1 Cup (16 tbs)|
|Eggs||2 , beaten|
|Flour||3⁄4 Cup (12 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Vanilla extract||1 Teaspoon|
|Chopped pecans||1⁄2 Cup (8 tbs)|
|Marshmallows||16 Large, halved|
|For chocolate topping|
|Unsweetened chocolate||2 Ounce|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Powdered sugar||2 Cup (32 tbs)|
|Milk||1⁄4 Cup (4 tbs)|
Grease an 11" x 7" baking pan; set aside.
Preheat oven to 350°F (175°C).
Melt butter or margarine and chocolate over low heat.
Remove from heat.
Beat in sugar, then eggs.
Combine flour, salt and baking powder.
Stir into chocolate mixture.
Add vanilla and pecans.
Pour into prepared pan.
Bake 35 minutes.
Remove from oven.
Immediately top with marshmallows.
Return to oven for 3 minutes or until marshmallows are soft.
Set aside while preparing Chocolate Topping.
Pour topping over warm marshmallows.
Cool in pan before cutting.
Chocolate Topping: Combine chocolate and butter or margarine in a small saucepan.
Place over low heat until just melted.
Combine powdered sugar, milk and vanilla in a small mixer bowl.
Add chocolate mixture.
Beat until smooth.
