Toffee Nut Bars
|Shortening||1⁄2 Cup (8 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs), firmly packed|
|Sifted flour||1 Cup (16 tbs)|
|Brown sugar||1 Cup (16 tbs), firmly packed|
|Baking powder||1 Teaspoon|
|Shredded coconut||1 Cup (16 tbs)|
|Almonds||1 Cup (16 tbs), chopped|
Cream together shortening and sugar until light and fluffy.
Stir in 1 cup flour and blend well.
Press with hand into bottom of an ungreased, 13 by 9-inch oblong pan.
Bake in a moderate oven (350° F) 10 minutes.
Beat eggs well.
Beat in 1 cup brown sugar and vanilla.
Mix together flour, baking powder and salt.
Stir into egg mixture.
Fold in coconut and almonds.
Pile egg mixture over top of baked dough in pan.
Return to 350° F oven and bake about 25 minutes.
Cool slightly; then cut into bars.
