Blueberry Bran Bars
|Quick oats||1 3⁄4 Cup (28 tbs) (Quick Or Old Fashioned, Uncooked)|
|Bran hot cereal||1 Cup (16 tbs), uncooked (Quaker Oats)|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Firmly packed brown sugar||1⁄2 Cup (8 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Vegetable oil||1⁄3 Cup (5.33 tbs)|
|Light corn syrup||1⁄3 Cup (5.33 tbs)|
|Blueberries||1 Pint (Fresh Or Frozen)|
|Granulated sugar||1⁄2 Cup (8 tbs)|
|Lemon juice||2 Teaspoon|
Heat oven to 350°F.
Lightly spray 11 X 7-inch baking dish with vegetable oil cooking spray or oil lightly.
Combine oats, oat bran, flour, brown sugar, baking powder and salt.
Add margarine and corn syrup, mixing until mixture resembles coarse crumbs; reserve 1 cup.
Press remaining mixture onto bottom of prepared dish.
Bake 10 minutes.
Combine blueberries, granulated sugar and 2 tablespoons water.
Bring to a boil; simmer 2 minutes, uncovered, stirring occasionally.
Combine remaining 1 tablespoon water, cornstarch and lemon juice; mix well.
Gradually stir into blueberry mixture; cook and stir about 30 seconds or until thickened and clear.
Spread over partially baked base to within 1/4 inch of edge; sprinkle with reserved oat mixture.
Bake 18 to 20 minutes or until topping is lightly browned.
Cool on wire rack; cut into bars.
Store loosely covered.
