|Brown sugar||1⁄2 Cup (8 tbs), firmly packed|
|Rum extract||1⁄4 Teaspoon|
|Sifted enriched flour||1 1⁄4 Cup (20 tbs)|
|Baking soda||1⁄4 Teaspoon|
|Instant cereal/Regular whole wheat cereal||1⁄2 Cup (8 tbs)|
|Drained prepared mincemeat||1 Cup (16 tbs)|
Heat oven to moderate (350° F.).
Butter an 8-inch square pan.
Cream butter and sugar.
Sift together flour, salt and soda.
Stir in cereal.
Add to creamed mixture.
Mix well to form crumbs.
Pack 1/2 of crumb mixture in bottom of pan.
Spread with mincemeat.
Sprinkle remaining crumb mixture over top.
Bake 20 minutes or until lightly browned.
Cut into 12 bars.
Remove from pan.
Heat bars before serving.
Serve with hard sauce or ice cream.
