Raisin Coconut Bars
|Shortening||1⁄3 Cup (5.33 tbs)|
|Brown sugar||1 Cup (16 tbs), firmly packed|
|Flour||2⁄3 Cup (10.67 tbs), sifted|
|Baking powder||1⁄2 Teaspoon|
|Seedless raisins||3⁄4 Cup (12 tbs)|
Melt shortening and blend in sugar.
Add egg and beat thor- oughly.
Sift together flour, baking powder and salt; stir into first mixture.
Blend in vanilla and raisins and mix well.
Spread in a greased, 8-inch-square pan.
Sprinkle with coconut.
Bake in a moderate oven(350° F) 30 minutes.
Cool and cut into bars.
