Walnut Meringue Bars
|All purpose flour||2 1⁄2 Cup (40 tbs)|
|Eggs||5 , separated|
|Sweet butter||1 Cup (16 tbs)|
|Apricot jam||2 Cup (32 tbs)|
|Sugar||1 Cup (16 tbs)|
|Ground walnuts||3 Cup (48 tbs)|
|Confectionery sugar||4 Tablespoon|
In a bowl, combine flour, egg yolks, sugar, butter and vanilla.
Blend with fork until dough comes away from sides, of bowl.
Press dough into an 1 lxl6-inch pan.
Spread with jam.
Beat egg whites until stiff, gradually beating in 1 cup sugar.
Fold in nuts.
Spread over dough.
Bake at 350 degrees for 40 minutes.
Sprinkle with confectioners' sugar.
Cool and cut into bars.
Any kind of jam can be substituted for the apricot.
The cookie is very rich, so make the bars small.
