Terry Shanahan - Homemade Protein Bars - Blueberry
|Coconut oil/Non stick cooking spray||2 Tablespoon|
|Coconut milk||1 Can (10 oz) (Not Lite)|
|Coconut flour||1 1⁄2 Cup (24 tbs)|
|Almond meal||1 1⁄2 Cup (24 tbs)|
|Sunflower seeds||1⁄3 Cup (5.33 tbs) (Optional)|
|Chopped walnuts||1 Cup (16 tbs)|
|Vanilla protein powder||180 Gram|
|Peanut butter/Almond butter||1 Cup (16 tbs) (more to taste if desired)|
|Rolled oats||2 Cup (32 tbs) (Paleo substitute would be more Almond Meal and Coconut Flour)|
|Stevia||4 Tablespoon (more to taste if desired)|
|Raw honey||2 Tablespoon|
|Water||1 Cup (16 tbs)|
|Bananas||2 (Or Blueberries- 10 ounces)|
1)Grease the muffin tray greased with coconut oil or use a cooking spray.
2)In a food processor or a large bowl whisk in Coconut Milk (Not Lite), Coconut Flour (almond flour is a substitute, but more expensive), Sunflower Seeds (optional), Walnuts, Vanilla TSP Approved Protein Powder (see My Store), Natural Peanut Butter or Almond Butter (more to taste if desired), Rolled Oats (Paleo substitute would be more Almond Meal and Coconut Flour), Stevia (more to taste if desired), Cinnamon, Raw Honey and water.
3)Process into a smooth paste and add the bananas or blueberries as per your choice.
4)Bake in the oven for 10- 12 minutes or when they rise and are golden brown at 380 degrees.
5)Serve as a snack and enjoy!!
