Pecan Bars

Ingredients
  Sifted all purpose flour 2 1⁄4 Cup (36 tbs)
  Salt 1⁄4 Teaspoon
  Granulated sugar 1 Cup (16 tbs)
  Soft butter 1 Cup (16 tbs)
  Egg yolks 2
  Brandy 1 Tablespoon
  Finely chopped pecans 4 Cup (64 tbs)
  Firmly packed light brown sugar 1⁄2 Cup (8 tbs)
  Ground cinnamon 1 1⁄2 Teaspoon
  Egg whites 4 , unbeaten
Directions

Sift flour, salt, and 1/2 cup granulated sugar.
Blend in butter; add egg yolks and brandy.
Pat evenly into pan (15 x 10 x 1 inch).
Bake in preheated moderate oven (350°F.) for 15 minutes.
In heavy saucepan put remaining granulated sugar, the pecans, brown sugar, cinnamon, and egg whites.
Cook, stirring, over low heat until sugars dissolve.
Increase heat and cook until mixture no longer clings to sides of pan.
Spread on baked mixture.
Return to oven for 15 minutes.
Cool slightly.
Cut into bars 3 x 1 inch.
Dust cookies with confectioners' sugar, if desired.
