Apricot Covered Cheese Bar
|For apricot jam|
|Snipped dried apricots||1⁄2 Cup (8 tbs)|
|Pineapple juice||1 Cup (16 tbs)|
|Chopped dates||1⁄4 Cup (4 tbs)|
|Package cream cheese||8 Ounce|
Soak apricots in pineapple juice in a bowl for a few hours or overnight in the refrigerator.
Puree apricots and juice in a blender with chopped dates. Set cream cheese bar in the center of a 9-inch serving plate. Spoon jam over top. Surround with crackers or party breads.
