Coconut Congo Bars
|Butter||13 Tablespoon, softened (1 stick, 4 ounces plus 5 tablespoons)|
|Firmly packed brown sugar||2 1⁄4 Cup (36 tbs)|
|Flour||2 1⁄2 Cup (40 tbs)|
|Baking powder||1 Tablespoon|
|Semi sweet chocolate chips||1 1⁄2 Cup (24 tbs)|
|Flaked coconut||1 Cup (16 tbs)|
1. Preheat oven to 350°F. Grease a 9 x 13-inch baking pan. In a medium bowl, beat butter and brown sugar with an electric mixer on medium speed until creamy. Beat in eggs until well blended.
2. Add flour mixed with baking powder and salt and beat until blended. Stir in 1 cup chocolate chips and coconut. Turn into prepared pan, leveling surface.
3. Bake 30 to 35 minutes, until a cake tester inserted in center comes out with a few moist crumbs clinging to it. Remove from oven and immediately sprinkle remaining 1/2 cup chocolate chips over top. Place on a rack to cool completely before cutting into 48 bars.
